Here, the mother goddess not only represents the earth that gives life, but also the primordial force that devours and renews. Various elements evoke the matriarchal universe: the moon, a symbol of the feminine and renewal; the rocks, steadfast guardians of the world's memory; the crocodile, a representation of Cipactli, the primordial monster whose fragmented body shaped the earth; milk, a sacred food that nourishes but also flows like the water of life and death.

A tribute to the mother goddess - In collaboration with Oscar Valle, “Head Mixologist” and partner of Licorería Limantour, located in Mexico City and considered one of the best bars in the world, ranked #9 in North America and #32 worldwide according to “The World’s 50 Best Bars” in 2025, and Andrés Gutiérrez, recognized as one of the most prominent designers and interior designers in Mexico and Latin America, this fusion of talent and creativity was born, integrating style, design, and exceptional service, reflecting the unique essence that distinguishes the property. This rooftop bar is not just a place of enjoyment: it is a sanctuary where the sacred and the profane intertwine, and where beauty shines with nuances of shadow. This space is built from symbols of duality.


Oscar's journey in the hospitality industry began at 17, working as a bartender for the legendary Liquid Chef Junior Merino in New York City. Merino taught him the discipline and work ethic necessary to succeed at large-scale events. Inspired by the rich flavors of Oaxacan cuisine, Oscar returned to Mexico City to pursue his passion for food and drink gaining experience in various roles at high-end restaurants and bars such as Death & Co. and the Experimental Cocktail Club. Today, Oscar orchestrates the movements behind Mijenta Tequila in Mexico and serves creative cocktails at Licorería Limantour Roma, Recently, Oscar joined the internship program at SIPS in Barcelona, named the "Best Bar in the World" by The World's 50 Best Bars 2024.

TONANA is a mixology bar that honors the memory of the earth and the alchemy of ancient healers. Its cocktails, created with infusions of medicinal plants, distillates reminiscent of sacred fire, and botanical essences, invigorate both body and spirit. Here, every color, every texture, and every design whispers the eternal secret of the Mother Goddess: "everything is born, everything dies, everything is reborn."

COMITÉ, a collaborative project with Executive Chef Miguel García, who has contributed to the international culinary scene, marks a reinvention of the restaurant, bringing to life a fresh and unprecedented concept in the city. Paying homage to the richness of Mexican cuisine, it reinterprets it with internationally inspired nuances to offer an authentic and sophisticated dining experience. Its philosophy revolves around respect for seasonal ingredients, the region's endemic flavors, and a commitment to freshness, quality, and sustainability. COMITÉ offers an intimate and casual setting; its atmosphere evokes a modern Mexican-Spanish Garden, where design and freshness intertwine with unique dishes that celebrate our Mexican roots enriched with global influences, in addition to a curated selection of classic cocktails that complement the culinary offering, elevating every moment and making each visit a pleasurable and memorable experience.
